Farwell- For the debut edition of Railroad City Recipes. I’ve decided to give the recipe for one of our personal favorites, 490 sauce steak.
So what is 490 sauce steaks? Well 490 happens to be our house number so that’s where the name comes from, but what is it exactly?
I got the idea from an Asian flank steak. The marinade was so good. So good in fact that I had to come up with my own and here it is.
Ingredients
2 NY strip steaks (size is your own personal decision)
3/4 cup coconut Aminos
3/4 cup soy sauce
1/2 cup brown sugar
1 tbsp minced garlic
1 tbsp olive oil
1 tsp salt
1 tsp coarse black pepper
Directions
Combine aminos, soy sauce, brown sugar, garlic, olive oil, salt and pepper in a mixing bowl. Next trim fat off of your steak, or leave it on if that’s how you like them. Next slice halfway into your steak, making three to four cuts.

Next you want to whisk your sauce mixture until the brown sugar is mostly or completely dissolved. You will now add your steaks, with the slices facing down into the sauce.

You will then want to cover the bowl with foil and place in the refrigerator for 1 hour minimum. The longer the steaks marinate the stronger the taste will get. I recommend sticking to 1 hour for this process.

After your steaks have marinated, you can then begin to fry them in a pan with butter. Occasionally I add butter during the cooking process. To really get the flavor that you’re looking for cook to medium or medium well.

Do not discard your remaining sauce. You will need this for the final glazing process. Once your steaks are to your liking you will want to increase heat and drizzle the remaining 490 sauce over the steaks and remain cooking for two to three minutes. Flip steaks once during this process.

You’re all set to enjoy with your favorite sides!
